Pomegranate Salsa And Goat Cheese Appetizer Bites

A couple of years ago, I introduced you to my easy to make recipe for a exotic flavorful pomegranate salsa using cranberries, cilantro ginger and pomegranates, of course. For this year's New Years Party,  this recipe is making a comeback! I am serving it as an appetizer on top of crispy crackers or brioche bread with creamy goat cheese. Robust flavors, this crunchy salsa pairs perfectly with goat cheese. Rich, buttery toasted brioche bread or crackers makes each eye catching delicious bite a fun and festive celebration!


Playing it smart to save time, for Christmas I am once again serving this Salsa Recipe as a condiment for my roasted trout. And since it stores well in the fridge,  I reserve a cup of it to use for my New Year's Eve appetizers!

Serves 15-20
Portions of ingredients may be varied based on number of quests; Pomegranate Salsa may be prepared 2-3 days in advance.

Other Ingredients:
Brioche Bread (or butter crackers)
15-20 basil, mint or cilantro leaves
Goat Cheese; room temperature for ease of spreading (even hard cheeses such as manchego works well if served in slices)

Slice brioche bread 1/8 inch thick. Either cut out squares, or using round cookie cutter. I recommend 2 pieces per number of quests.
Preheat oven to 350° F. Place brioche on flat cookie sheet and bake 7-8 minutes until golden.
Remove from oven and cool.
Spread 1 teaspoon of goat cheese on top of bread (or crackers), top with 1 teaspoon of pomegranate salsa, and garnish with basil, mint or cilantro.
