Vegan Sandwich; Roasted Red Pepper Hummus, Avocado, Persian Cucumber & Tomato

Love makes an ordinary meal, extraordinary! Whether it is love for those I cook for or simply for the love of ingredient and cooking, my mother instilled within me at a very young age "love makes everything taste better". Would you not say that is the truth?



These fresh, beautiful, picked off the vein, sweet heirloom tomatoes from our garden inspired me today to make a cool, healthy, summer sandwich for my beloved family. Fresh organic ingredients from our garden's harvest of red and yellow tomatoes, avocados, Persian cucumbers and fresh basil transformed an ordinary hot summer day into an extraordinary enjoyable one. Light and refreshing, this simple and easy to make sandwich requires minimal ingredients yet delivers  knock-out flavors.  A well balanced meal containing protein (yes! from the hummus which is spread inside of the bagel), healthy fat (from seeds, nuts, and avocado), multi vitamins and minerals from fresh vegetables.
I know what you are thinking: "Marjan, have gone vegan on me?" For this recipe, yes! As you know, my motto is always balance; therefore, with this year's summer heat and weekly grilling, I serve all vegan meals two to three times per week to make it easy, healthy, balanced, nutritious, and delicious.

Ingredients:
I have not given amounts as you can add as much or less of below ingredients to your desired number of sandwich and taste buds:

  • Roasted Red Pepper Hummus (I usually don't like purchasing ready made ingredients, but trust me, it is worth buying vs. making from scratch)
  • Avocado; sliced
  • Tomatoes; sliced
  • Persian Cucumber; sliced
  • Basil; chopped
  • Seeds (sunflower, pumpkin, sesame, etc.) or nuts (slivered almonds, chopped walnuts or pecan)
  • Onion Bagel (I love Costco's bagels as they are jammed with poppy and sesame seed, garlic and onions)
  • Dash of sea salt and ground black pepper

Lightly toast bagel (I prefer to slice my bagel in half and then toast them). Spread 1 teaspoon of hummus on the inside of each slice of bagel. On the bottom bagel, arrange desired amount of tomatoes and cucumber; sprinkle a light dash of salt and pepper.  Top with desired amount of sliced avocados. Sprinkle either seeds or nuts (or both!) on top of avocado along with fresh basil. Place other slice of bagel; cut sandwich in half for easier biting and enjoy!
