Easy Taco Seasoned Baked Salmon

This year I shared many beloved, labor intensive recipes with you. Of course, the more love poured into preparing a dish, the more delicious the delivery. Yet with certain recipes, even the most basic ingredients can deliver just as satisfying of a meal. I'm making it up to you now with my less than five ingredients baked salmon: taco seasoning, lime zest & juice, and olive oil!

Simply, mix all the ingredients in a bowl, pour over salmon wrapped in foil, bake at high temperature for 15 minutes and serve on a bed of rice! Couple of weeks ago, I posted my recipe for Spanish rice; give it a try as the tomato based rice will compliment this tangy flavorful salmon.

Ingredients
1/2 salmon, deboned and skinned
3 tablespoons taco seasoning
2 large lime zest & juice
1 tablespoon mayonnaise
1 tablespoon cooking oil

Preheat oven to 450° F on Broil.
In a small bowl, blend well taco seasoning, mayonnaise, and lime juice and zest. Cover sheet pan with foil. Drizzle 1 tablespoon of cooking oil on foil where salmon will be placed; then spoon one tablespoon of taco mix over the oil and spread to cover entire bottom of where the fish will be placed.  Place salmon on top of seasoned mix. Fold sides of foil to form a containing short wall around salmon. Spoon mix over fish.



Bake fish for 15 minutes.
Serve over white or Spanish rice; garnish with scallions and freshly ground black pepper.
