Salmon With Strawberry Basil Glaze

For this recipe, I have combined all of my favorite spring time ingredients! Once a week, I serve fish for my family. Therefore, I have a collection of recipes to choose from, making sure we don't ever disdain from enjoying a healthy serving. Recently, I purchased delicious juicy strawberries from my farmer's market. Along with fresh basils from our garden, I created a new recipe for roasted salmon which was healthy, delicious, beautiful, and refreshing!
Slightly sweet, accented with lime zest and garlic, yet balanced with herbaceous goodness of basil, my salmon was out of this world delicious. Dare to be different and try it for yourself! Variety is the spice of life indeed.
Serves 4-6
Ingredients:
6 salmon fillets
1 1/2 cups sliced fresh organic strawberries
1/4 cup sugar (3 tablespoons of honey is an excellent substitute)
3 tablespoons organic butter
1 lime (juice and zest)
2 tablespoons freshly chopped basil
1 clove minced garlic
sea salt and freshly ground black pepper
extra virgin olive oil
In a small sauce pan, macerate strawberries with sugar. Let stand for 30 minutes, then over medium-low heat, bring to boil. Boil until strawberries are slightly cooked (15 minutes).
Remove strawberries with slotted spoon and cook down juice until a slightly thick syrup is rendered. Add zest and lime juice, garlic, butter, 1/2 teaspoon each salt and pepper. Continue to cook over low heat for additional 5 minutes. Add strawberries back into pan and turn heat off.
Preheat oven to 500° F, or on broil/high with rack at middle. Grease baking dish with olive oil and place salmon filet, skin side down. Lightly sprinkle with extra virgin olive oil, sea salt and freshly ground pepper. Roast fish for 5 minutes.
Remove salmon filet from oven and spoon strawberry glaze over fish and broil for 3-4 minutes. Remove from oven, sprinkle with chopped basil. Garnish with fresh basil or strawberries to serve.
