A Trip to Provence and A Strawberry Caprese Salad

We just returned from another gorgeous trip to Provence. It's been a family vacation: days of fun and play, some relaxation (as good as it gets with two small kids in tow), walks through amazing little villages and lavender fields, visits to the farmers' markets, plenty of fresh Baguette & French wine (being surrounded by so many great Côtes du Rhône vineyards, how can you say no?) and simple, fresh meals.










Days being hot, produce being fresh, we made a lot of simple salads, such as these fennel salads, tomato-peach-salads or this strawberry caprese here. Simple as can be yet full of flavor - one of my all time summer favorites.



Ingredients

1 lb fresh, flavorful strawberries (avoid flavorless, out.of season berries)
about 1 cup pearl-size mozzarella cheese (if you can't find it at your store, simply cut a larger mozzarella cheese into small cubes)
a handful of fresh basil (small-leaved if you have)
about two-three tablespoons of the best olive oil you have at home
about 1-2 teaspoons balsamic vinegar,
salt (I prefer fleur de sel) and freshly ground black pepper to taste

Wash, hull and slice strawberries, add mozzarella cheese, basil, oil, vinegar and S+P and you're all set for an amazing salad to enjoy.
