Trout with Asian Salsa
by Marjan
I will never sacrifice taste to lose weight. Living in southern California, summers are long and it is bikini season up until October! Watching my diet has never meant skipping meals or flavors. One of my healthy, quick, summer meals includes roasting fish with a flavorful sauce. Less time cooking and more time enjoying long summer days is the goal.
I thought of Anja as I created this dish because I know how busy moms are taking care of all things with children, yet wanting to also enjoy a good meal, and spend plenty of time outdoors to enjoy the sun and all the summer time fun. Therefore, I just had to share this with anyone who is busy working, taking care of children, or balancing multiple responsibilities. Fast, tasty meals are how Anja likes to cook: so dearest Anja, this is for you! Thanks for the inspiration.
Preheat oven to 350.
Place four of any white fish fillet (trout, tilapia, halibut, etc) on an oiled baking sheet.
In a blender or food processor, place 3 green onions (green stems only), 1 garlic clove, 2 tablespoons of chopped ginger, ½ teaspoon crushed red and black pepper, ¼ cup soy sauce, one lime zest and its juice, 1/4 cup olive oil, 1 teaspoon honey and blend until a well chopped salsa texture has formed. Spoon salsa over fish and bake for 35-40 minutes depending on the thickness of fish fillets.
Serve hot or cold, this fish is to please.
