Summer Party

At the risk of boring you to tears I just can't stop praising the few warm, sunny, amazing summer days in Switzerland. If you have to wait for so many months, you simply embrace each and every one of these wonderful days. So, we try to celebrate the most precious days with as many summer parties as we can.

Last weekend we were invited by my good friend Eveline. I've known Eve for almost 15 years now, and she is one of these amazing women, where you just wonder, how does she do all of that? All of that meaning being a wonderful mom for her lovely daughter Jara, being an incredibly talented textile designer, styling and decorating her gorgeous home, being a marvelous host. I feel so inspired every time we're invited and spend some hours in her company, enjoying amazing food in swell ambience.

Last weekend was yet another fun and convivial afternoon. We had so much fun and enjoyed great food.






Patric, the man of the house, served perfectly done caipirinhas while our girls were enjoying the pool and we snacked on bruschetta made of whole-grain spelt bread.
 

For appetizers Eve served a simple yet wonderful salmon mousse with shrimp.
We then enjoyed a colorful bean salad featuring green beans, kidney beans and chick peas, a nice pasta salad, garlic bread and fresh melon alongside the amazing cognac-infused steaks Patric grilled.

For dessert it was my amaretti-mascapone cream with fresh strawberries. Always hitting the spot.







Eveline's Salmon Mousse with Shrimp Appetizers

Ingredients (serves 4):

1/2 cup ricotta cheese
1/2 cup creme fraiche
80-100g (about 3 oz.) smoked salmon
20 shrimp
salt & pepper to taste
lime, cherry tomatoes & parsley for garnish (or anything else you like)

Puree salmon with 1/4 cup ricotta cheese.
Add creme fraiche and the other half of the ricotta and mix well (with a spoon, don't use a mixer). Season with salt & pepper and fill into glasses.
Briefly sauté shrimps and place on top of the mousse. Drizzle some lime juice over shrimps and garnish as you like.
