Simple Pasta with Pine Nuts & Basil

These days, with a lively three-year old and a newborn at home, it's all about quick, simple and healthy meals. We're loving salads such as these two fennel salads, my last year's discovery tomato and peach salad or this amazing strawberry caprese, and simple pasta dishes such as my beloved orzo with roasted shrimp. Lately I've been making some simple pasta with pine nuts and basil. So easy, yet so delicious, featuring basically the same ingredients as pesto, but only roughly chopped: pine nuts, basil, garlic, olive oil and parmesan cheese. Use some whole-grain pasta and you've got a healthy, wholesome meal in just a few minutes.




Ingredients (serves 3-4)
note: measurements are only rough suggestions, vary as you like

about 1/2 cup pine nuts
a handful basil
1 garlic clove
4-5 tablespoons of your best olive oil
about 1/2 cup freshly grated parmesan cheese
about 400g (about 3/4 lbs.) pasta of your choice.

In a pan over medium heat, roast pine nuts for a few minutes, careful not to burn. Let cool and chop roughly.
Wash and chop basil, mince garlic clove.
In a bowl, mix pine nuts, basil, garlic, olive oil and parmesan cheese, set aside.



Cook pasta al dente, drain and mix with the other ingredients.
