Sharing - Part III (Diane’s Morning Glory Muffins)

With gratitude, in review of my life, I have been blessed with the most amazing family and friends…
What I am most in gratitude for are angels that present themselves in my life. Some are momentary sprinkles of magic; others are guardian angels who are within my heart always. Their presence is profoundly sensed in every aspect of my daily life; their gifts are abundant in every moment; their resonance will be felt for eternity.
Think about your life: outside your immediate family and friends, who graces your life with these qualities? I hope you are blessed with such an angel.
My angel is my long time master, teacher, practitioner, friend, confidant and love Diane. I was blessed when my path crossed her's as I pursued to learn Tai Chi. Immediately, I became intrigued with her unique awareness for 'seeing' and teaching yoga, which was a true passion of mine.

Diane embraces my life with unconditional love, patience, strength, gentleness, compassion, and complete acceptance. Words fail to describe her true soul. Her spirit is superior to any earthly angel; her wisdom is deeper than any sage; her heart bigger than the universe.
For those of you who have your angels, this is a good time to share with them how much they mean to you. For those who have not recognized your angel, I ask you to open your heart and soul; your angel is waiting to come forth. I am blessed everyday of my life with Diane.
Diane’s presence is one of the greatest gifts of my life. She continuously blesses me with books of yoga, wisdom and poetry; she showers me with lavished candles, flowers, crystals, and so much more. Recently, she shared with me Paleo's recipe for Morning Glory Muffins. She lovingly baked them for me and wrapped them in a beautiful package so adoringly that I did not want to ruin her wrapping.  But I could smell the baked muffins inside and could not resist!

The wholesome and delicious muffins, her artistic handwriting with the enclosed recipe, and the overwhelming love from her gift overwhelmed my senses.  Therefore, I had to share with you Paleo's recipe for Morning Glory Muffins! Not only is the recipe gluten and sugar free; it is also full of sweet, healthy goodness.  This is one muffin I can enjoy all day long without guilt. In the morning, I enjoy them with tea; during the day I enjoy them as a healthy snack; at night I enjoy them as desert with my family. Absolutely no guilt!

Morning Glory Muffins
2 ½ cups almond flour
1 tbsp cinnamon
1 tsp baking soda
½ tsp salt
2 cups grated carrots
1 large apple- cored and grated
1 cup shredded coconut
1 cup golden raisons
3 large eggs
¾ cup coconut oil
1 tsp vanilla extract
¼ cup raw pecans (can also substitute with almonds or walnut)
2 tbsp honey

Preheat oven to 350. Grease standard size muffin pan (12 c.) or use muffin liner or 24 c. sized muffin pan.
Combine almond flour, cinnamon, baking soda, and salt in a large bowl.  Add carrot, apple, coconut and raisins. Combine well and add chopped nuts.
In a separate bowl, whisk eggs, honey, oil and vanilla together.
Pour their mixture over dry ingredients and mix well.  Batter will be very thick.
Spoon into muffin pan and place on middle rack of oven for 40 minutes ( or 20-25 minutes for smaller muffins). Insert tooth pick to check for doneness.
Cool muffins in pan for 10 minutes. Then remove to a wire rack to finish cooking.
