Mallorca-Style Potato Salad

Summer has been coming to an end here in Switzerland. The last two weeks have been cold and rainy - a tough transition from the ultra-hot and sunny days we had around mid August. So, it's time to escape for a few more hot summer days and visit our beautiful Mallorca finca. A few more days of relaxing by the pool, taking in some sun, eating outside... Can't wait!
For those of you who want a little bit of Mallorca feeling at home comes a great potato salad recipe. It's a great salad to combine with barbequed meat or fish, but of course, can be enjoyed on its own. The herbs make it a truly delicious and healthy dish at once. It's really easy to prepare, too.
Ingredients:
2 lb. fingerling potatoes
4 garlic cloves
1 cup mint leaves
1 cup parsley leaves
1-2 teaspoons cumin
salt and pepper
3 tablespoons freshly squeezed lemon juice
5 tablespoons of your best olive oil
optional: sea salt
1. Wash potatoes and cook in boiling water for about 20-25 minutes, until tender. Rinse and set aside.
2. In a food processor combine all other ingredients and pulse until a smooth paste forms.
3. Mix paste with potatoes, sprinkle some sea salt on top.
Best enjoyed warm or lukewarm.
