Brigg's Salmon Teriyaki with Watermelon and Arugula

If you have read the article 'Brigg's Lime Shrimp' a couple of weeks earlier, you might have been waiting for the recipe for the 'Salmon Teriyaki with Watermelon and Arugula'.
Here it is! This is another perfect Summer dish that you will want to add on to your regular menu. Because it's so easy to prepare and  it tastes extra special so how can you not?

The combination of warm and soft salmon texture with juicy cold watermelon and mildly bitter arugula taste would make your meal time signable!





Ingredients ( 4 servings):

3 cups of cut up watermelon (1 inch squares)
2 ts black sesame seeds
4 cups of arugula

Salmon marinade:
1.5 lbs salmon fillet
1/2 cup soy sauce
1/2 cup orange juice
2 cloves garlic
1 tbs chopped ginger
2 tbs brown sugar
2 tbs rice wine vinegar


1. Marinate Salmon for 10-30 minutes and bake for 15-20 minutes.

2. Arrange bed of Arugula and Watermelon on each plate. Sprinkle Black Sesame seeds on top of Watermelon. Serve the Salmon on top of Arugula.
