Enjoying Hot Summer Days With A Tomato-Peach Salad

Finally. Hot summer days here in Switzerland. We were almost losing hope for a great summer. Summer is so short here that we get upset for every cool and rainy summer day. At least the two months it could potentially get hot here, it should be so...



Needless to say I've been in heaven these last few days. Hot and sunny with refreshing swims in the pleasantly cool river. How much I love these days!!


Also, because for a change it feels so good not to cook, but to enjoy wonderful salads or chilled soups. My new friend this summer is this tomato-peach salad here. We've always enjoyed insalata capreses, the Italian tomato, mozzarella & basil salad, but I grew a bit tired of it. Playing around with what I had at home, I dicovered the wonderful combination of tomatoes and peaches - finished with olive oil, white balsamic vinegar, fresh thyme, pepper, and if you wish some goat cheese. Soooo good, I could have it every night.





Ingredients

- tomatoes (vine,cherry tomatoes, heirloom tomatoes or a mix)
- ripe peaches
- a few sprigs of fresh thyme
- the best olive oil you have in your pantry
- white balsamic vinegear
- freshly groudn pepper
- crumbles of goat cheese (optional)

Wash and slice tomatoes and peaches, arrange on a platter
Splash soem olive oil and vinegar on top, finish with some freshly gound pepper and thyme. Add goat cheese crumbles if you like. And enjoy!
