Amaretti-Mascarpone Cream With Fresh Strawberries

This is the time - plenty of fresh, local produce, warmer temperatures and lighter and healthier meals, bowls of fresh strawberries for dessert. I love this time of the year!

One of my favorite desserts featuring strawberries is this amaretti-mascarpone cream. I just love the combination of amaretti and strawberries, of the dense and rich texture of the mascarpone and the crunch of the amaretti.



This is a delicious dessert for those who can enjoy sweet things without counting calories!


Ingredients (serves 6-8)

4 very ultra-fresh eggs, preferably organic
4 tablespoons sugar
1 lb. mascarpone cheese
5 oz. Amaretti cookies (Italian almond cookies)
1 lb. fresh strawberries

Optional:
2-3 tablespoons Amaretto liquor


1. Separate egg whites from yolks. Beat egg whites.

2. Mix yolks with sugar until color turns very light, add mascarpone cheese and mix until mixture is smooth. With a spoon (not the mixer!) carefully add egg whites. Break cookies into crumbles and add to the cream, if you wish, add some Amaretto. Put into a bowl and let cool in the refrigerator for at least two hours.

3. Wash and hull strawberries, and cut into half. Put strawberries on top of cream before serving.

A little note: Since raw eggs are part of this dessert, you need to be extra careful not to have your dessert out in the heat for too long. Leftovers should be quickly put back into the refrigerator and not be kept for more than one day.
