My Favorite Cookie

Thank you Anja, for sharing your mother-in-law’s recipe for the Swiss almond cookie. I baked them and they were delicious and easy to make. There was one ingredient missing: having you and your sweet family next to me to enjoy together with tea! I especially miss having the luxury to sneak to my godchild ‘just one more cookie’.
I must share with you my recipe for a healthy chocolate chip cookie! I think here, it is American’s favorite cookie. But as you know, I try to minimize my sugar and butter consumption to snack on a ‘healthier’ cookie. With the addition of walnuts and oatmeal, I have transformed an ordinary chocolate chip cookie into a sweet, satisfying bite!

Preheat oven to 375 degrees
Cream together in a small bowl:
½ tablespoon vanilla
½ cup butter-room temperature
½ cup brown sugar
2 eggs
In a large bowl, mix the dry ingredients:
1 ½ cups crushed oatmeal
½ cup crushed walnuts
1 cup flour
½ teaspoon each of salt, baking powder, and baking soda
6 oz. miniature chocolate chip
With a large spoon, blend together the wet ingredients into the larger bowl of the dry ingredients until well mixed. With a teaspoon, scoop cookie mix one by one onto a cookie dish. Bake for 12-14 minutes until golden. Remove from cookie sheet and cool on a rack. Or if you’re like me, immediately enjoy with cup of cold milk!
