Drunken Skewered Shrimp

End of summer - time to enjoy these last warm and pleasant evenings before the cool fall nights will arrive. I love entertaining with easy meals for family and friends at my San Diego ranch. This is an easy to make, flavorful, grilled shrimp served on bamboo skewers that promises to delight your crustacean loving friends.




Ingredients (serves 4-6)

24 jumbo shrimp- skinned and deveined
¼ cup freshly squeezed lime juice
¼ cup tequila
¼ cup extra virgin olive oil
1 teaspoon zest of fresh lemon
3 tablespoon freshly chopped cilantro
½ teaspoon red pepper flakes
¼ teaspoon sea salt and freshly ground black pepper
6 bamboo skewers soaked in cold water
Chives for garnish


Thirty minutes prior to grilling, marinade your shrimp in the above ingredients. Skewer 4 shrimps on each skewer. Preheat grill over medium/high heat. Place shrimp over grill for two minutes. Brush marinade over shrimp. Turn skewers over, and grill for another 2-3 minutes until dark golden grill marks form on shrimp (making sure not to over cook the shrimp). Remove from heat and garnish with chives. Serve immediately with tequila shots! What a great way to start a gathering.
