Our Favorite Avocado Recipes

by Marjan

Who doesn't love avocados? Here at Savorychicks, we all do! Therefore, Anja and I will share with you our top two favorite appetizer recipes using avocados:

Marjan's Guacamole
As a mischievous child going through school, summer was my favorite season; for obvious reasons, it was the end of classes and home work and the start of hot, lazy, fun, summer days. As an adult, I appreciate all the four seasons due to their distinctive gifts.
As a savorychick, I value not only the changes in weather, aroma in the air, nature’s magnificent paintbrush on the land, but most importantly, the varieties of seasonal fruits and vegetables reflective of the time of year. I am blessed to have my country home nestled in the heart of avocado producing ranches. In Southern California, Bonsall and Fallbrook combined have the largest avocado ranches in the United States. Perhaps this is why I was inspired to perfect my recipe for Guacamole.

Ingredients (serves 4-6)

5 ripe avocados
½ to ¾ cup chopped ripe tomatoes
½ to ¾ cup chopped red bell peppers
1-2 chopped jalapeno- incorporate the seeds if you like it spicy; if not, discard the seeds prior to chopping
½ cup finely chopped purple onion
½ cup chopped cilantro
½ cup freshly squeezed lime juice
Salt and freshly ground pepper to taste

In a large bowl, toss tomatoes, bell pepper, jalapeƱo, onion, cilantro, lime juice, salt and pepper. Lastly, to preserve the avocados from turning brown, peel your avocados, remove the seed and mash into your vegetable mix. Add more lime juice if needed. Play around with ingredient amounts: I like my guacamole spicy, sometimes I add 3-4 jalapenos; if you like a tangy guacamole, use more lime juice; if you prefer subtle creamy flavors, minimize use of lime juice, bell peppers and jalapeƱos. Served best with tortilla chips or even try it as a dressing on your chicken sandwich…It will turn boring into fantastic! Olay!

Anja's Avocado-Strawberry Salsa
Anja's favorite avocado recipe is a avocado-strawberry salsa. It is very good as a light lunch with a piece of bread or with grilled meat.

Ingredients (serves 2-3):

one ripe avocado
two handful fresh strawberries
balsamic vinegar
olive oil
fresh pepper and salt to taste

Dice avocado and strawberries, add vinegar (about one teaspoon, maybe more) and olive oil (about one tablespoon, maybe more) - mix and ready!

Keep in mind, the simpler the recipe the more important is the quality of the ingredients!! Make sure to use fully ripe avocados and strawberries and the best balsamic vinegar and olive oil you can get.

Hope you will enjoy these treats while laying out by the pool with friends and family. Don’t forget the margaritas!
