The Best Sugar Cookies

I’m not a big baker, but every year in December I find myself craving the smell of homemade cookies and all of a sudden baking becomes fun again. Usually I try one or two new recipes, but I always come back to these simple sugar cookies here. To me, they are the best. Easy to make, yet full of pure cookie flavor. I like'em best just the way they are without any icing or decoration.
Ingredients (for about 40 cookies):
1 cup softened butter
3/4 cup granulated sugar, plus more for rolling
1 egg yolk
1 teaspoon vanilla extract
2 cups flour
a pinch of salt
1. With a mixer, cream the butter about 1 minute, add the sugar and beat until light and fluffy.
Add the egg yolk and vanilla and beat a few more minutes. Slowly add the flour and salt and mix until the dough comes together.
2. Shape the dough into logs about 1.5 inches (5cm) in diameter. Roll the logs in sugar, then wrap each one in plastic and refrigerate until firm (about an hour).
3. Preheat oven to 350 degrees F (180 degrees C). Slice the logs into 1/4 inch (0.5 mm) rounds and place on a baking sheet (buttered or covered with parchment paper). Bake 10 minutes!
4. As good as they smell when they come out of the oven, let them cool first!
