Holiday Appetizer Bites With Goat Cheese, Grapes, Cranberries and Nuts

by Marjan

The Holiday season has once again arrived much sooner than I expected.  I'm baffled how quickly the months pass. Autumn and winter are my favorite seasons as I find myself reflecting back on the year.  Personally, it has been a challenging year; therefore, all the more reason to reflect on the past with a better understanding for the circle of life. As the leaves outside my window change colors and fall unto the grass, I am reminded that nothing stays the same and how quickly days, seasons, and life unfolds.  For me it is important to take a few moments each day and enjoy changing of the seasons, appreciating the gift of the day, and sharing life with those I hold close to my heart.

All the more reason to celebrate and entertain this time of the year as well. In our family, we have never made the Holidays about exchanging gifts. We prefer to open our doors and hearts to those we love by reminding them of all the things that truly matter to us such as sharing, health, peace, love and joy.
Therefore, I would like to share with you one of my favorite healthy recipes for appetizers that is sure to bring love and joy to you and your guests.  It is super easy to make with minimal ingredients. Delicious and visually appealing, these goat cheese stuffed with grapes and garnished with cranberries and nuts will be delightful colorful ornaments on your table.

Ingredients are as follows: goat cheese, small green or purple grapes, crushed roasted hazelnuts, crushed roasted pistachios, and finely chopped dried cranberries. Number of goat cheese balls made will depend on number of guests.  I would assume on average 2 bite size balls per guest will be sufficient. Simply take a teaspoon of goat cheese and flatten it in the palm of one hand.  Place one grape in the center of the cheese and roll it into a ball (masking the entire grape in the cheese).  Have prepared in small flat individual dishes each nut and cranberries. Then roll individual goat cheese ball in different garnishes and place on serving platter. Simple, easy, and healthy bite size cheese balls are best served with crackers or toasted bread along with your favorite wine.
May your Holidays be colorful, tasty, and filled with joy!
