Mediterranean Inspired Cucumber Salsa

The month of January seems to be the hardest month for most people to face: It’s time to practice far reaching New Year’s resolution goals, pay back credit card bills from all holiday expenses from the month of December, and there are few festivities to look forward to until Valentine’s Day. No wonder most people suffer from depression in the month of January.

What is that all about? Who says you can’t have a party mid January to spruce up the month?


This savorychick has a solution! It’s time to throw a party mid January. Gather your friends for post-new year’s party! Celebrate embracing the New Year and make plans to bring more joy, fun, and laughter to your lives. Why not make this a tradition every year?

I did want to share with you my recipe for a healthy cucumber salsa that will maintain your resolution to lose weight and eat healthy. These tiny bite size appetizers which are pleasing to the eyes and taste buds, are the best introduction to a fun party. Tangy, flavorful pops of flavor…who needs Champaign?


Ingrdients:

24 pieces of humus chips (or any vegetable cracker of your choosing)
24 small salad or lettuce leaves to cover crackers or chips
½ cup chopped Persian cucumbers
2 tablespoon chopped ripe tomatoes
½ cup chopped apple
1 tablespoon goat cheese-softened
1 tsp chopped fresh basil leaves
1 teaspoon lemon zest
Salt and pepper to taste

Blend in a small bowl cucumber, tomatoes, apple, cheese, zest, salt and pepper. Place lettuce leaves on top of crackers and spoon salsa on top. Garnish with pomegranates.
