Tropical Salad

Do you ever assess your food based on its nutritional content? Crazy as it sounds, I do! I think it is just as important to mentally note what we are feeding our body. So many of our meal choices are centered on taste and calorie count. All of that is great! Why not elevate our knowledge as to the nutritional value of our food?

For example, the salad I am introducing to you today is saturated with vitamins A, C, B6, thiamine, magnesium, phosphor, manganese, zinc, iron, chlorophyll and fiber! I know, it doesn’t sound glamorous or tasty! But if I were to mention: ‘this is a flavorful, tangy, light salad, robust with lemon and rice wine vinegar; enhanced with chunks of fruits to complete any meal’! Now, I think I have your attention! But at the core, I think your body’s natural wisdom is equally excited over the above mentioned vitamins!



This salad is easy to prepare and it incorporates hemp seed, as I introduced to you last week. This is a complete meal filled with tangy and nutty flavors to be enjoyed on a hot day-packed with flavors of orange, pineapple, grape, chicory, arugula and of course, hemp seed. Enjoy and be nourished!


Ingredients:
(proportion to your individual preference)

Bite size chunks of orange, pineapple, and halved grapes
Thinly sliced purple onions
Baby arugula leaves and chicory lettuce
Handful of hemp seed

Dressing: serves four
Zest of one lemon
½ cup freshly squeezed lemon juice
¼ cup rice wine vinegar
1 tablespoon honey
Salt and pepper to taste
¼ cup extra virgin olive oil

Whisk the ingredients for the dressing. Drizzle over salad before serving.
