Tidbits: Roasting Chestnuts

by Anja

A few days ago when I was reading Coco's article on Roasted Heirloom Cauliflower and Chestnut Soup I could almost smell the chestnuts roasting in my oven. So I headed to the store, bought a bag of chestnuts, and today, on a snowy Sunday afternoon we turned on the fireplace and put some chestnuts in the oven. What a smell!! And what a delicious, healthy winter snack!

Simply score an X across the top of each chestnut with a sharp knife. Preheat oven to 450F. Place nuts on a baking sheet and roast for 20-25 minutes.

  1. I LOVE roasted chestnuts!!! I usually boil them just because it's easier. Lately I have discovered Korean sweet potatos at the Korean grocery store in Chicago. They are soooooooo good!

Of course I used to eat them when I was growing up in Korea then I stopped eating sweet potatos all together since I came to US in 1980. First time I tried sweet potatos here, I decided I didn't like them. So re-discovering the taste of K- potatos all over again was quite exciting for me :)
