Banana Blueberry Pancakes





In my eyes, my father is the sweetest man you can imagine and probably the one with the sweetest tooth. So, every year for father's day I like to surprise him with a sweet breakfast -this is my way to celebrate this special day for him.


This year it will be my famous Banana Blueberry Pancakes. The secret to this recipe is: ripe bananas and real maple syrup. Simple good organic ingredients is always key.
This recipe serves 4-5 large pancakes.


Ingredients
1 cup all-purpose flour
1 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
1 large egg
3/4 cup milk
3 tablespoon melted room temperature butter
½ cup fresh blueberries and ½ cup thinly sliced ripe bananas (play with the measurements to suit your taste)
butter to grease griddle
maple syrup

In a large bowl, mix first 4 dry ingredients. In a smaller bowl, beat eggs with milk and oil. Add to flour mixture and stir just until flour is moistened. Add blueberries and banana and lightly stir.
In a small sauce pan, over low heat, warm desired amount of syrup (1/2 cup or more depending on how sweet you like your pancakes). Drop ¼ cup of left over blueberries into the syrup for garnish and flavor (optional).

Heat griddle or skillet over medium heat. Once griddle is hot, coat with butter and pour batter to approximately 5-6” diameter. Cook until bubbles burst on the surface and edges look dry.

Flip the pancakes with a large flat spatula until underside is golden. Repeat with remaining batter and serve immediately with warm syrup.
