Tidbits: Roasting Chestnuts

A few days ago when I was reading Coco's article on Roasted Heirloom Cauliflower and Chestnut Soup I could almost smell the chestnuts roasting in my oven. So I headed to the store, bought a bag of chestnuts, and today, on a snowy Sunday afternoon we turned on the fireplace and put some chestnuts in the oven. What a smell!! And what a delicious, healthy winter snack!



Simply score an X across the top of each chestnut with a sharp knife. Preheat oven to 450F. Place nuts on a baking sheet and roast for 20-25 minutes.
