Incredible Tuna Fish Sandwich

Summer is here with all of its glory! Long warm summer days, blue skies, pool parties, and all the varieties of summer fruits and vegetables inspire me to want to prepare easy flavorful dishes. Because of hotter days, I enjoy meals that do not require a lot of cooking by a hot stove. Also, I like to take advantage of robust flavors of uncooked vegetables!


So when I am really hungry and want to have a fulfilling meal without feeling heavy, I prepare my recipe for a zesty tuna fish sandwich. It is light, tangy, full of summer vegetables and best of all, a little spicy. I was uninspired by the uneventful tuna fish sandwiches prepared in restaurants; therefore, I decided to get creative with my own. You can play with the ingredients: want a little more spice? Add more jalapeƱos; for a more earthy taste, add more chopped celery and less lime juice. Even if you don’t like canned tuna, you will love this recipe! That is why I call it the Incredible Tuna Fish Sandwich!


Ingredients
7 oz. can of tuna; strained of all canning liquids
¼ cup finely chopped celery
¼ cup finely chopped green bell pepper
¼ cup finely chopped purple onion
1 small jalapeno- seeded and finely chopped
½ teaspoon yellow mustard
1 tablespoon mayonnaise
1 lime juice and zest
Salt and pepper to taste
Crushed red chili flakes (optional for color and more spice)
Slices of sourdough bread- toasted
**optional: tomato, lettuce & celery

Combine all the above nine ingredients. Add chili flakes for more spice and to give your mix a nice presentation. Place desired portion of the mix in between toasted sourdough bread; add sliced tomatoes, lettuce, or celery if desired.

For your next summer party, you can dazzle your quests with bite size crackers topped with a small leaf of butter lettuce, and then a teaspoon of the tuna mix on top. Garnish with cilantro and a few finely chopped red bell peppers for garnish.
