I'm probably in the minority when I admit enjoying all the side dishes and turkey leftovers more the day following Thanksgiving. T-Day, I am overwhelmed with cooking and entertaining, and therefore really can't relax and enjoy my labor of love. That's why the following day, I reheat most of my leftovers; leisurely serving myself and enjoying every bite. However, there is always enough turkey left over to serve another dinner party. Two days of having turkey back to back is seriously enough!

Measurement of ingredients may be altered depending on the number of people being served and amount of leftover turkey. For our purposes, number of servings below is for four people.
8 slices of your favorite sandwich bread (I prefer rosemary olive oil bread and sourdough)
1 cup shredded turkey leftover (white and dark meat mixed works just as well)
2 celery stalks- finely chopped
3 tablespoons finely chopped purple onion
1/2 of one red bell pepper- finely chopped
1 large lime- zest and juice
1 tablespoon mayonnaise
1 tablespoon of Dijon mustard
1/4 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped parsley
*optional- dash of red pepper flakes
Toast bread slices; meanwhile, in a bowl, toss and mix all the above ingredients until well combined. Place mixture in-between toasted bread and enjoy!
