Berry Tart

Summer in Switzerland can be wonderful. Warm and sunny summer days, getting together with dear friends and enjoying great food and chilled wine together. And finishing the convivial nights with a lovely dessert. One of the greatest summer desserts I can think of is this berry tart. I've made it a couple of times in the last few weeks, and every single time I was asked for the recipe. So, time to share it with all our readers, I believe.


It is so easy to prepare, combining an almond-meringue crust with cream and fresh summer berries. Everyone I know loves it!



Ingredients:
3 egg whites
1 ½ cups confectioners (powdered) sugar
1 ½ cups ground almonds

1.5 cups cream
3-4 cups fresh berries of your choice


1. Preheat oven to 340 degrees F.

2. Place some parchment paper at the bottom of a spring form.

3. Beat egg whites until stiff. Add confectioners sugar and ground almonds. Put batter into spring form and bake until light brown (about 35 minutes). Let cool.

4. Whip cream until firm and spread onto pastry. Top with fresh berries of your choice and serve immediately.
