Mediterranean Mango Salad

Mangos are in season! Take advantage of them. Not only are mangos delicious, they are equally nutritious! Mangos provide many essential vitamins (such as A, C, E, B6, K), dietary minerals, and fiber. Commonly, mangos are used in chutneys, drinks and dessert. Why not incorporate this healthy, sweet fruit into a salad? Toss it in your basic green salad with a vinaigrette dressing; or try something new: Mediterranean Mango Salad! Mangos are traditionally used in tropically inspired dishes. However, in my part of the world, Mediterranean influences run deep in my veins. Feta cheese, mint and olive oil, take this tropical fruit on a long journey to the Middle East. The next time you want to serve salad, substituted my recipe for a mango salad. It’s easy, fast, nutritious and delicious! Ingredients 3 mangos (not to firm and not too ripe)- julienned ½ purple onion- sliced thinly ½ cup mint leaves ½ cup crumbled feta cheese 1 cup arugula or any loose green leaf for salad 1 avocado (optional)-julienned Salt and freshly ground black pepper 3-4 tablespoon of Red wine vinegar 2 tablespoon of extra virgin olive oil In a large salad bowl, combine mangos, onion, avocados, salt, pepper, red wine vinegar, and olive oil. Before serving, toss in mint and arugula. Crumble on top the feta cheese and serve! What a Mediterranean delight!
