Summer Spaghetti with Feta Cheese, Arugula and Tomatoes

You may have noticed by now – I love pasta! I love it so much that it finds its way onto my dinner table at least two to three times a week. Hence, I am always looking for new varieties as I couldn’t have the same pasta dishes over and over again. So, I recently tried this great Greek-inspired summer recipe, combining tomatoes, sundried tomatoes, arugula, and feta cheese. Very simple, yet very flavorful.





Ingredients (serves four)

1 lb spaghetti
1 bunch arugula (about 2 to 3 handful)
100g (3 to 4 ounces) feta cheese
2-3 large tomatoes or equivalent amount of cherry tomatoes
1 cup sundried tomatoes
olive oil,
salt and pepper

1. Chop feta cheese, arugula, and tomatoes. Put into a large bowl and mix with good olive oil (about 3-4 tablespoons).

2. Bring water to a boil in a large pot, add salt and cook pasta al dente. Drain and mix with the other ingredients. Add salt and pepper to taste.



If you should have any leftovers, keep them and have them cold the next day! Very good, too!
