Toasted Brie Cheese & Tomato Sandwich

I came up with this simple recipe reminiscing about my many trips to Europe. Often, I was so tired of eating rich foods, that I would crave a simple, light sandwich. Most places had brie cheese and tomato sandwiches ready to go. It satisfied my hunger and didn’t make me feel heavy…and the taste was simply good!

In the comforts of my own home, I experimented with this sandwich, however, took it to the next level. Rather than having a cold sandwich, I toast my brie sandwich to give me the comfort of a warm, cooked meal. I also use exotic balsamic vinegars such as fig and pomegranate as a dressing to add a tangy bite. Garnish with basil to raise the intensity of the flavors and make it pleasing to the eyes.



Whenever I am entertaining a small group of friends, I like to serve this as a hot appetizer fresh out of the oven. If this is a taste of the food that is to follow, your friends are in for a delightful experience.

Directions:
Preheat oven to 300 degrees
On a piece of parchment paper, place as many thin slice of French bread as you desire. Top with preferred amount of brie cheese. Place a thin slice of tomato on top of the cheese. Sprinkle with sea salt and freshly ground pepper. Lightly drizzle your favorite balsamic vinegar and olive oil on top for flavor. Toast in the oven until the cheese melts and your toast is slightly toasted. Garnish with fresh basil and enjoy!
