Molten Chocolate Cake

Planning a New Years Eve dinner? Still looking for the WOW-dessert to top off your menu? Here it comes – the dessert that never disappoints and will be the perfect start into the New Year: a molten chocolate cake!




I have to admit, I am not a big chocolate lover. Hard to believe given the many years I’ve lived in Switzerland. But I swear, for many years I didn’t even touch chocolate. Until that one evening in Los Angeles, when Marjan insisted I try the molten chocolate cake at Katana. And indeed, it was lovely. Ever since, I’ve slowly come to appreciate good chocolate.

Knowing that almost nobody can resist a molten chocolate cake, this delicious dessert became part of my repertoire whenever entertaining guests. It is the ultimate dessert for chocolate lovers and doesn’t need any more advertising! Just see how quick and easy it is to do!



Ingredients (for six single-serving chocolate cakes)

4 tablespoons unsalted butter,room temperature, plus more for muffin tins
1/3 cup granulated sugar
3 large eggs
1/3 cup flour
1/4 teaspoon salt
8 ounces bittersweet chocolate, melted
powdered sugar for dusting

Serve with: vanilla ice cream


1. Preheat oven to 400 degrees. Generously butter 6 cups of a standard muffin tin.

2. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition. With the mixer on low speed, beat in flour and salt until just combined. Beat in chocolate until just combined. Divide batter evenly among prepared muffin cups.

3. Place muffin tin on a baking sheet; bake just until tops of the cakes no longer jiggle when the pan is lightly shaken, about 8 minutes. Remove from oven; let stand 10 minutes.

4. Turn out cakes and place on serving plates. Dust with powdered sugar, and serve with vanilla ice cream.
