Turkey Salad Sandwich

Most of us order or make turkey sandwich because it is the healthiest choice when craving sandwiches. That's boring! What if you had a recipe full of flavor which would make you crave it and therefore make it all the time? Well, I have it in the bag! Not only is this sandwich healthy, it is also a visual delight. Try any variation of ingredients you prefer to make turkey slices come alive with robust flavors.


Ingredients for 2 sandwiches:
Amounts of ingredient and vegetables used may be varied based on your specific taste. The key to this sandwich is the lemon juice and zest, red wine vinegar, olive oil, salt and pepper dressing. Quality ingredients are key! I prefer left over organic whole turkey breasts which I roasted the night before; however, slices are just as tasty!

4 slices of toasted slices of gourmet bread, such as olive/rosemary or focaccia
organic turkey slices
2 slices of swiss cheese
1 ripe tomato
½ of a medium bell pepper- sliced thinly
¼ of a small purple onion- sliced thinly
1 jalapeno- remove the seeds and slice thinly
small bunch of baby arugula or any herb of choice
1 small lemon juice and zest
1 tablespoon red wine vinegar
2 tablespoons quality extra virgin olive oil
1/4 teaspoon each sea salt and freshly ground black pepper

*optional: radish and scallions slices

In a small bowl, toss bell peppers, onion, and jalapeƱo slices. Add to your mix the lemon zest and juice, salt, pepper, vinegar and olive oil to taste.

Toast your bread pieces. On two of your slices, place a desired amount of arugula and tomato slices; followed with cheese, turkey and desired amount of vegetables and marinade juice. Garnish with radish and scallions if using. Finish with the final slices of bread.

Easy, fun, and full of flavor.
